Frozen prepared food refers to packaged food made mainly from agricultural products, livestock and poultry, aquatic products, etc., which are pre treated and processed using quick freezing technology, and stored, transported, and sold in a frozen state (with a product center temperature below -18 ° C). Frozen processed foods can be divided into two types: raw frozen and cooked frozen. Frozen prepared food refers to products that are processed at room temperature through pre cooking, stir frying, steaming, baking, and other processes to achieve a center temperature of 85-95 ℃. The main characteristics of this type of food are that the protein undergoes moderate denaturation after processing, the meat is firm and elastic, has a chewy feeling, is fresh, tender, crispy, soft and juicy, and maximally maintains the original nutritional content and inherent flavor of the food. However, due to the low sterilization temperature, it cannot kill the fine bacteria that form spores, and is prone to spoilage during storage, transportation and sales. Therefore, it must be stored and transported under frozen conditions with a short shelf life.
